Green onion omelet

I'll tell you what you can put there :
  • 3 eggs
  • 1 large bunch of green onions, diced
  • 1 shallot, diced
  • 1 tablespoon of olive oil
  • Spices: black pepper, salt, chilis, etc. to taste

Green Onion Omelet
The green onion omelet is served hot or cold, often inside a pita sandwich for road trips! Pictured here, it is served with rye bread and hummus.

I'll tell you what you can do :

This recipe is sooo easy and sooo delicious! Chop up the shallots finely and sauté with a little bit of oil in a medium frying pan. Remove from heat.

In a bowl, whisk through 3 whole eggs and then add in all the green onions. It will seem like a lot, but the more green onion the better! Add the shallots and give the mixture one last stir, adding salt, pepper, and chilis to taste.

Fry the omelet on medium heat in the frying pan, flipping only once, until it is golden brown on each side.

Mmmmm, smells sooo good! Serve it with pita or rye bread, and a generous helping of hummus. It makes a great pocket sandwich!

Tip

This is a great food to take on a picnic. Many people think of omelets only as breakfast food, but a hearty omelets like this one is similar to the Spanish tortilla or Italian fritatta—but much quicker to make!
